Sweet potato and cinnamon pound cake
Ingredients:
- 2 small sweet potatoes / 1 big potato
- 220g flour
- 2 tablespoons of baking soda
- 280g sugar
- 1 spoon of cinnamon
- 2 eggs
- 118ml oil
- 65g greek yogurt 10%
- 180g white chocolate

Clean and cut the potatoes in cubes and cook until the fork passes through them very easily.
Then drain the water and mash them well with a fork. Leave puree to cool completely.
Meanwhile, start the oven at medium level and prepare the pound cake form.
In a bowl mix the flour, sugar, baking soda and cinnamon. Mix the potato mashed potatoes with the the 2 eggs, adding them in turn and mixing after each one. Then add the oil and yogurt and mix well.
Put this composition over the dried elements and slowly mix with a spatula until it is completely homogenized.
Pour the dough in the cake form and leave in the oven for about an hour or until the toothpick test goes out and the it comes out clean.
After it cools, melt the chocolate at bain marie and then imediately pour it over the cake.
